Three New Contest Winners
My wife and I found it quite fun to try the many recipes that came in this past month. It was really difficult to choose a winner as so many made us “Oooo and Ahhh”. However, after a little bit of debate (and possibly an arm wrestle), the winner of the Best Healthy Recipe for January is….. Doug Shepard!
Doug’s winning recipe, which will be featured on next week’s meal plan:
- Four 6-ounce fresh salmon filets
- 1 1/2 tablespoons olive oil
- 4 tablespoons fresh orange juice
- 1 teaspoon sea salt
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/8 teaspoon allspice
- 1/8 teaspoon cayenne pepper
Salsa:
- 1 large avocado, diced
- 1/2 cup diced red onion
- 1 orange, diced
- 1 jalapeño pepper, seeded, ribs removed, and diced OR 1/8 teaspoon cayenne pepper
- 2 teaspoons fresh lime juice
- 3 tablespoons fresh orange juice
- 2 tablespoons fresh cilantro, minced
Sea salt and black pepper to taste
In a baking dish combine the olive oil and the orange juice. Lay salmon in it and turn to coat. In a small bowl combine the salt, onion powder, paprika, black pepper, allspice, and cayenne pepper. Sprinkle over each side of salmon filets. Set aside to marinate for 30 minutes.
In a small bowl combine all ingredients listed under Salsa. Mix, cover and chill in the fridge until the Salmon is done cooking.
Heat a large skillet over medium-high and lightly coat with olive oil or vegetable cooking spray. Add the salmon and cook for 4-5 minutes; turn and cook on the other side for 2-3 minutes or until fish flakes easily. Serve with chilled avocado salsa. Makes 4 servings.
Per regular-sized serving: 412 Cal; 42 g Protein, 20 g Tot Fat, 8 g Carb; 2 g Fiber; 4 g Sugar
Is your mouth watering yet? Ours did! My wife and I first saw the ingredients and thought this may take a while but it was really quick and easy to make and since you cook the Salmon on a skillet our meal was done much quicker then normal. We also realized this would be a great way to prepare chicken. So anyone out there that doesn’t like fish just substitute with chicken and let us know what you think. Our 2nd contest winner was for the Best WholeBody Green Recipe. We knew this was the winner when our 2 year old kept crying for more- haha. Congrats to Teri Kuchar for creating this concoction. The winning recipe is:
- 1 cup apple juice
- 1/2 c nonfat plain Greek yogurt
- 1/2 banana, frozen
- 3 strawberries, frozen
- 1 scoop WBG green
- 1 scoop WBG berry
- 1/4 t vitamin C powder (Note***We tried substituting this with an orange squeezed instead and it was delicious)
- Mix well in blender.....Yum!!!
